CAULIFLOWER MOUSSE

500 g (1 lb 2 oz) cauliflower, cut into small pieces

100 g (3½ oz) butter

1 litre (35 fl oz/4 cups) milk

Fine sea salt, to taste

2 titanium-strength gelatine sheets, soaked in iced water

400 ml (14 fl oz) single cream

LOBSTER CONSOMMÉ

1 tablespoon olive oil

500 g (1 lb 2 oz) rock lobster, split in two and cut into 8 pieces

1 vine-ripened tomato, chopped

½ celery stalk, peeled and diced

1 white onion, finely chopped

1 tablespoon brandy

250 ml (9 fl oz/1 cup) dry white wine

1 litre (35 fl oz/4 cups) chicken stock

2 titanium-strength gelatine sheets, soaked in iced water
